Broccoli & Orange Salad With Orange & Cream Salad Dressing

Salad:

2 10.5 oz. cans of mandarin oranges , drained
1 medium broccoli crown , separate florets
1/2 cup sweet red bell pepper , seeded and diced
2 cups of baby spinach leaves
2 cups romaine lettuce pieces

Dressing:

1 cup non-fat vanilla yogurt
1 6 oz. can of orange juice concentrate, thawed
1/2 cup of fat free or reduced fat milk

Combine salad dressing ingredients in blender. Blend well until smooth, about 30 seconds. Yields 2 cups. Serve immediately.

In large salad bowl, add mandarin oranges, broccoli, red bell pepper, spinach, and romaine lettuce leaves. Toss until well blended. Add salad dressing as desired.

Serves 6.
