Banana, Spinach and Tomato Salad With Honey Yogurt Dressing PDF Print E-mail

Salad:

2 Bananas , sliced
3 Tomatoes , large, ripened, sliced and seeded
2 cups Baby Spinach leaves (pkg. Salad)
Juice of 1 Lemon

Honey Yogurt Dressing:

1 cup of plain Vanilla Yogurt
4 tablespoons of Honey
1/2 teaspoon of Lemon Zest

Grate lemon peel into zest. Mix honey and yogurt with lemon zest. Blend well, cover and refrigerate for 1 hour minimum.

Place spinach leaves on bottom of serving trays or salad bowl. Arrange tomatoes on top of spinach leaves. Arrange banana slices on top of tomatoes. Brush banana slices with lemon juice. Cover and refrigerate for 30 minutes. Top with Honey Yogurt Dressing.
