Americans consume 53 pounds of hard fats (i.e. meats, etc), shortenings (i.e. baked goods, etc) and cooking fats (i.e. oils) per person in 1972. In 2001 the consumption has risen to 74 pounds. We are moving in the wrong direction! Poor nutrition education and the increased eating at fast food restaurants are to blame. There are 312 fats that are available for use in frying alone!
