Ingredients 1 Packet Wiley's ® Beans & Peas Seasoning 2 Cups Dried Navy Beans or Pinto Beans 1 Small Onion, finely chopped 1/2 Cup Chopped Celery Salt & Pepper to Taste Preparation: In a large pot add, dried beans to 6 cups of water. Soak overnight. Pour off water. Replace with 6 cups of fresh water. On low heat, simmer partially covered pot for about and hour or until slightly tender. Add onion, Wiley's seasoning, celery, salt, pepper and continue cooking until beans are tender and liquid is thick. Mash about 75% of the beans against side of pot. Simmer a short while until very thick. Monitor heat well beans are easily scorched. Taste soup and add additional salt and pepper as needed.
