Servings: 6 Ingredients 1 Packet Wiley's ® Beans & Peas Seasoning 1 1/2 Cups dried black-eyed peas (Soak overnight using cold water & drain) 1 Teaspoon Cayenne Pepper 6 Cups of water 1 Cup long-grain grain rice (do not use Instant Rice) 1 Onion finely chopped 1 Cup of chopped onion Preparation: In large pot, add peas, onion, and Wiley's Seasoning to 6 cups of water. Bring mixture to a gentle boil. Boil uncovered for about 1hour & 20 minutes, or until peas or tender. Don't overcook your peas. You don't won't them mushy. Also be careful not to allow peas to absorb all the liquid. Add more water as needed. When peas are tender, add rice to mixture along with 3 cups of water. Bring mixture to gentle boil, stirring occasionally to prevent burning or sticking. Lower heat and cover. Cook covered for an additional 20 minutes on medium to low heat. Remove from heat once rice is tender and let stand for 10 minutes.
