Spinach, Grape, and Nectarine Salad |

With Yogurt Dressing | Ingredients 1/4 cup red onion, dice 2 cups baby spinach, washed, stemmed and torn into small pieces 1/2 cup purple grapes, pitted and halved 1/2 cup sliced nectarines, unpeeled and pitted 1/2 cup diced cucumber, cubed, seeded and unpeeled | | Dressing: 1 teaspoon Wiley’s Shallot Pepper Salad Jazz. 1/2 cup of vanilla or lemon fat free yogurt 1 tablespoon of freshly squeezed lemon juice 1 tablespoon of water 1 chopped scallion Preparation: Combine salad ingredients in salad bowl. Toss gently until well blended. Drizzle dressing over salad. Sprinkle Wiley's Shallot Pepper Salad Jazz on top of salad and serve. |
