Spicy Sausage and Pork Jambalaya with Tomato, Peppers, Onions, Celery and Rice |

Wiley's Dirty Rice Seasoning is a spice full flavored sensation that lends itself to many rice dishes, meats, and can also be used for rubs. Try it on vegetables for a more robust side dish.
Ingredients .6 oz. Wiley's ® Dirty Rice Seasoning 13 oz. Breakfast Sausage 13 oz. Pork, cubed - pork loin end 6 ½ oz. Onion, med. dice 6 ½ oz. Celery, med. dice 6 ½ oz. Green Pepper, med. Dice 1 tsp. Garlic, chopped (tsp.) 1 lb. 3 oz. Brown Gravy, Lagout brand canned 6 ½ oz. Water 1 ½ ea. Bay Leaf (ea.) 1/3 tsp. Chili Powder (tsp.) 1/3 tsp. Gumbo File (tsp.) 1 ½ tsp. Parsley, dry flake (tsp.) 5 oz. Rice, long grain -raw Preparation: 1. Heat a pot and add the pork, sear meat and lightly brown without cooking all the way through. 2. Add the cooked sausage and brown for an additional minute. 3. Add the onion, celery, green pepper and garlic and cook till translucent. 4. Add the remaining ingredients and bring to a simmer. Cover pot and lower heat, making sure to stir occasionally. Cook till rice is fully cooked. Remove from heat and serve. 5. Hold at 140°F or above, uncovered. Store at 40°F or below.
