Salad toppings don't have to be high in calories.   • Start with a colorful salad blend: The more colors and varieties of greens in the salad, the better.

Gone are the myths that suggest that salads are rabbit food or that you couldn’t possibly get enough nutrition or be completed satisfied from eating a salad meal. A daily salad meal could contain upwards of 7 to 9 servings of fruits and vegetables. Because a serving of produce isn’t as large as most people think, you can easily consume more nutrition from a well-constructed salad than you from just about anything else that you could possibly eat. It’s easy to create a salad meal that contains upwards of 7 to 9 servings of fresh produce without even knowing it. Servings sizes aren’t as large as most people may think.” The U.S. Agriculture Department has just released new guidelines that indicates just what comprises a serving of produce:

  • One medium sized fruit, such as an apple, orange or peach
  • ¼ cup dried fruit like raisins or dried cranberries
  • ½ cup of cut-up fruit
  • 1 cup of leafy vegetables including lettuce and spinach
  • ½ cup of cooked or canned beans or peas
  • ½ cup of raw, cooked, canned or frozen vegetables

Salad has long held the title as the “ideal” diet food. Salads are potentially so much more. Just imagine enjoying a delicious salad meal that offers a strong defense against the onset of hypertension or cancer. Well, you can create a salad from a combination of fruits, vegetables and other nutritious ingredients that will do just that. Many of the new salad recipes are loaded with delicious ingredients that include powerful anti-oxidants and minerals.

Knowing the nutritional benefits and characteristics of certain produce is key to selecting the produce items to add to your salad. For example, broccoli would be an excellent addition to a salad entrée. Scientists have long since discovered that fresh broccoli offers cancer-fighting, antiulcer, and antiviral properties, as well as aiding in regulating blood sugar and insulin levels.

According to the National Restaurant Association, Salad Meals are the fastest growing item on restaurant menus. Salads are also popular at home. Everyday, more than 6 million Americans purchase a bag of pre-cut, pre-washed salad greens. Also, more than 15% of Americans enjoy a salad meal two or more times weekly.
