2009 has been designated as the National Year of the Salad. This designation couldn't have come at a better time particularly when the obesity and overweight figures for adult Americans continue to climb. You're probably wondering why the designation and why this year particularly when many of us only think of salads as the small bowl of lettuce greens you're served at a restaurant while anticipating the main course. I believe that this idea limits the power and the satisfying experience that anyone could have if they would just venture off into the wonderful world of salad creating. In my opinion, salad could be the most nutritionally powerful food as well as the tastiest food you've ever experienced with a little creativity and the willingness to experiment with different tastes and textures.

I'm also concerned about the continuous increases among American adults who are either obese (Body Mass Index of 30.0 or greater) or overweight (Body Mass between 25.0 and 29.9). Diagram A is a map of the U.S. illustrating the percentage of adult obesity by state and Diagram B presents an analysis highlighting the combined percentages of the combined overweight and obesity figures for the 50 states including the District of Columbia. Needless to say, the elevated levels of obesity and overweight across the country are alarming. I'm particularly concerned about the levels of overweight and obesity in my native southeast. We are placing the finishing touches on an exciting wellness initiative that we'll announce soon on this website called S.O.S. (Saving Our South).

This year, I've made the decision to do something about it. Firstly, I plan to shed the unnecessary pounds that I've been carrying around, and secondly, I plan to have an entree salad everyday for lunch. My goal is to be 25 pounds lighter by May, National Salad Month. Join me on the Wellness Journey!
